Tropical Tiki Popsicle in Cocktail

This Cocktail looks and tastes fabulous. It will transport you to a sandy beach with warm ocean breezes! 

Our Tropical Tiki Popsicle Cocktail uses our Tropical Tiki Infusion that we infused with vodka. Rum would be wonderful too, we just happened to have vodka handy.

We added vodka to the infusion and let it infuse in the refrigerator for 3 days.

Tropical Tiki Popsicles

Recipe makes 4 popsicles

Pineapple slices (optional) Cut slices into smaller pieces, add 3-4 small 1 inch approx. pieces to the popsicle mold. We used a lay down mold. If you are using a stand up mold, you can add at the end.

3 oz. Tropical Tiki Infusion

2 oz. Pineapple Juice

8 -10 oz. Coconut milk

Add the the mold and freeze until frozen 4-6 hours

Tropical Tiki Cocktail

Rim the glass with honey and coat with coconut flakes (we used unsweetened)

Add 1.5 oz. infusion

2 oz. mango or pineapple puree ( add 5-6 chunks frozen fruit to a blender)

3.oz Coconut milk

Add the frozen popsicle and garnish with sliced oranges or pineapple and a mint sprig.

This is a great drink for hot summer days that can be enjoyed with friends!
