We created a tea party menu that is perfect for a brunch or a holiday such as Mothers Day that includes cocktails & mocktails. 

It was lots of fun researching tea party menus from the best hotels and restaurants around the world. There were quite a lot of similarities, so we decided that our tea party menu for adults would be somewhat traditional that includes our own little twists.

Japanese egg salad sandwiches

Being a huge Tony Bourdain fan, I was well aware of his love of the Japanese 7-Eleven Egg Sandwich. It is the best egg salad hands down so it has been added to the menu. If possible try to find Japanese Milk bread for both sandwiches. If its unavailable, Brioche bread is the best substitute.

5 large eggs

¼ cup Kewpie mayonnaise

½ teaspoon kosher salt, plus more to taste

½ teaspoon granulated sugar

⅛ teaspoon black pepper

2 teaspoons heavy cream

1 tablespoon unsalted butter, softened

2 (1 1/2-ounce) Japanese milk bread slices (1/2 inch thick)

Directions for Japanese Egg Salad

Cucumber sandwiches

English cucumber sliced thin

Japanese milk bread or Brioche

Cream Cheese 

1 8oz cream cheese (softened)

2 tbs mayo (Kewpie used)

1 tbs heavy cream

1 tsp. concentrated chicken stock (Better than Bullion or one cube dissolved with 1tbs. water)

1 1/2 tsp. lemon juice

2 green onions chopped

salt and pepper to taste.

Mix together ingredients and spread on each side of the bread. Place the cut cucumbers on top of one slice and cut each sandwich into 4 triangles.

Lemon Coconut Swiss rolls

Vanilla Genoise Cake w/ Lemon curd 

4 large eggs (separate yolks and whites)
1/2 cup + 2 tbsp sugar
1 tsp bourbon vanilla extract
1 cup all-purpose flour
¼ tsp salt

Filling

Lemon Curd Recipe

Whipped Cream

1/2 cup cold heavy cream

1/4 tsp. bourbon vanilla extract

1 tbs. powdered sugar

Decoration

1/2 cup Coconut Flakes

Cake Instructions

I used this cake recipe with some changes. I unrolled while still warm and spread the lemon curd over the entire cake. I then cut down the center and made 4 even cuts along the long side, creating 8- approx. 3.5 inch by 5 inch pieces.

Roll each 3.5 x 5 inch piece and immediately wrap with plastic wrap (some may crack if the cake cooled too much, but the whipped cream will cover, so no worries!)

Keep in fridge in the plastic wrap until ready to decorate. (can be made ahead and decorated the following day)

Whipped Cream

Whip the cold heavy cream until stiff peaks form. Add the vanilla and powdered sugar to blend. Unwrap the cake and use a knife to coat all sides of the cake. Sprinkle the toasted coconut to cover the cake, garnish with edible flowers.

Toasted Coconut

Preheat oven to 275

Place coconut on metal baking street, toast until slightly brown. Approx. 3-5 mins

Add the toasted coconut flakes to the whipped cream covered Swiss rolls. Garnish with edible flowers.

Macarons

Recipe for French Macarons to make from scratch or purchase from your favorite grocery store.

Tea

Offer a selection of your favorite teas, such as Earl Grey, English Breakfast or Herbal.

Lemon drop cocktail or mocktail

Honey Lemon Drop Cocktail/Mocktail

We infused with vodka, can be made with green tea or another spirit.

1.5 oz infusion

4oz sparkling water

The jar will make 10 drinks, keep any extra infusion in the jar, refrigerate to use another time. (Jar will keep for 2-3 months)

Garnish with edible flowers.

Some fun conversation starters to add a bit of fun to any gathering!
