We love creating cocktail and food pairings for easy entertaining. Our botanical cocktail with mini moss cake are unbelievably pretty and delicious! 

When I first saw “Moss Cakes, I fell in love with them, but I did not love using the traditional spinach. So we created our own version using graham crackers and coconut for the moss and it tastes fabulous!

We paired our Blueberry & Botanicals Infusion with vanilla raspberry mini Swiss rolls that are decorated in a lovely moss.

Blueberry & botanicals Infusion

We infused with gin, can be made with green tea or another spirit.

1.5 oz infusion

4oz sparkling water

The jar will make10 drinks, keep any extra infusion in the jar, refrigerated to use another time. (Jar will keep for 2-3 months)

Moss Cakes

Vanilla Genoise Cake w/ Raspberry filling

4 large eggs (separate yolks and whites)
1/2 cup + 2 tbsp sugar
1 tsp bourbon vanilla extract
1 cup all-purpose flour
¼ tsp salt


Raspberry reserves (we used Aldi Organic)

Whipped Cream

1/2 cup cold heavy cream

1/4 tsp. bourbon vanilla extract

1 tbs. powdered sugar


1/2 Cup Graham cracker crumbs or  5-6 crushed whole graham crackers

Unsweetened coconut

Yellow and green food coloring

Moss Garnish

Fresh blueberries, raspberries & edible flowers

Cake Instructions

I used this cake recipe with some changes. I unrolled while still warm and spread the preserves over the entire cake. I then cut down the center and made 4 even cuts along the long side, creating 8- approx. 3.5 inch by 5 inch pieces.

Roll each 3.5 x 5 inch piece and immediately wrap with plastic wrap (some may crack if the cake cooled too much, but the whipped cream will cover, so no worries!)

Keep in fridge in the plastic wrap until ready to decorate. (can be made ahead and decorated the following day)

For the cocktail, I used a small brush with honey to coat the area where I wanted the moss. I used the green colored coconut for the glass and garnished with fresh fruit/edible flowers. (see video)

Whipped Cream

Whip the cold heavy cream until stiff peaks form. Add the vanilla and powdered sugar to blend. Unwrap the cake and use a knife to coat all sides of the cake.

How to make the moss

Place the crushed graham crumbs in a quart bag. Add food coloring to desired shade.

Add coconut to another quart bag and try to make a different tone of green by also adding yellow.

Remove some of both bags and place on a plate, Use to coat the logs by sprinkling the moss over the cake. Set on a clean plate when coated fully. (Using both colors help to make the moss more realistic)

Garnish with blueberries, raspberries and edible flowers.
